Ingredients:

  • Store bought or homemade pizza dough
  • Half an onion (sliced)
  • 1 1/2 cup oyster mushrooms
  • 1/2 cup fontina cheese
  • 1/4 cup Parmesan
  • 1 garlic clove (sliced)
  • Fresh fennel
  • Salt + pepper
  • Olive oil
  • Crushed red pepper
  • Flaky saltInstructions:
  1. Set oven to 475°
  2. Form the dough into a round shape to fit in the cast iron
  3. Sauté oyster mushrooms and onions in olive oil on medium heat in the cast iron for about 2-3 minutes
    (remove sautéed mushrooms and onions from the cast iron into a separate bowl)
  4. Place shaped dough into the cast iron skillet
  5. Add fontina slices, Parmesan, sautéed oyster mushrooms and onions, slices of garlic, fennel, pepper flakes, salt and pepper, and a drizzle of olive oil
  6. Pop that sucka in the oven for about 12-15 minutes or desired golden crispness
  7. Season with flaky salt and serve
