Ingredients:

  1.    1 — 1 1/2 cup of cooked white or brown rice
  2.    2 tablespoon olive oil (more if needed for topping)
  3.    1-2 cups oyster mushrooms
  4.    3 heaping tablespoons Herbs de Provence
  5.    2 tablespoon butter
  6.    Salt + pepper

Directions:

  • Cut the mushrooms into equally sized pieces to cook them evenly
  • Heat up 2 tbsp olive oil in a large skillet on medium heat
  • Spread mushrooms out in the pan and cook for 3-5 minutes
  • Season mushrooms with salt and pepper, continue to cook
  • Add butter to the pan, then the cooked rice
  • Stir mushrooms and rice together, add the Herbs de Provence
  • Add more olive oil and salt and pepper if desired
