Ingredients:
- 1 — 1 1/2 cup of cooked white or brown rice
- 2 tablespoon olive oil (more if needed for topping)
- 1-2 cups oyster mushrooms
- 3 heaping tablespoons Herbs de Provence
- 2 tablespoon butter
- Salt + pepper
Directions:
- Cut the mushrooms into equally sized pieces to cook them evenly
- Heat up 2 tbsp olive oil in a large skillet on medium heat
- Spread mushrooms out in the pan and cook for 3-5 minutes
- Season mushrooms with salt and pepper, continue to cook
- Add butter to the pan, then the cooked rice
- Stir mushrooms and rice together, add the Herbs de Provence
- Add more olive oil and salt and pepper if desired
