Ingredients:
- Store bought or homemade pizza dough
- Half an onion (sliced)
- 1 1/2 cup oyster mushrooms
- 1/2 cup fontina cheese
- 1/4 cup Parmesan
- 1 garlic clove (sliced)
- Fresh fennel
- Salt + pepper
- Olive oil
- Crushed red pepper
- Flaky saltInstructions:
- Set oven to 475°
- Form the dough into a round shape to fit in the cast iron
- Sauté oyster mushrooms and onions in olive oil on medium heat in the cast iron for about 2-3 minutes
(remove sautéed mushrooms and onions from the cast iron into a separate bowl) - Place shaped dough into the cast iron skillet
- Add fontina slices, Parmesan, sautéed oyster mushrooms and onions, slices of garlic, fennel, pepper flakes, salt and pepper, and a drizzle of olive oil
- Pop that sucka in the oven for about 12-15 minutes or desired golden crispness
- Season with flaky salt and serve
